Meatloaf, Cheesy Potatoes & AsparagusMeat Loaf
with Cheesy Potatoes
and Asparagus in Mustard Sauce
Meat Loaf 2 lbs hamburger 1 small onion, finely diced 1 egg 2 tablespoons Worcestershire sauce 1 teaspoon salt ½ teaspoon ground black pepper ½ cup rolled oats ½ cup parmesan cheese 8 ounce can tomato sauce 14.5 ounce can diced tomatoes (undrained) Combine all ingredients except for tomato sauce and diced tomatoes. Place mixture in bottom of large removable stoneware pot. Combine tomato sauce and diced tomatoes. Top meat mixture with tomato mixture. Cover with removable divided dish. Cheese Potatoes 3 medium potatoes, finely diced ½ cup milk ½ cup water ¼ lb American cheese Combine potatoes, milk and water. Add to one side of divided dish. Slice American cheese thinly and layer on top of potatoes. Immediately before serving, gently stir cheese and potatoes. Asparagus in Mustard Sauce 3 cups asparagus, fresh or frozen and defrosted 3 tablespoons ground Dijon style mustard 4 tablespoons butter, melted ½ cup chicken broth Combine all ingredients and stir gently. Add to one side of divided dish. Cover with glass lid and cook 6-8 hours on low. |
