Pork Roast with Mango, Corn Casserole and Zucchini

Pork Roast with Mango and Ginger
2 lb pork loin roast
14 ounce can mango chunks in mango juice
1 teaspoon salt
½ teaspoon ground white pepper
2 tablespoons fined chopped fresh ginger
Place pork loin in large removable stoneware. Combine remaining ingredients. Top pork loin with mango mixture. Cover with removable divided dish.

Corn Casserole
2 ½ cups frozen corn, defrosted
14 ounce can cream corn
2 tablespoons sugar
4 tablespoons butter, melted
2 tablespoons flour
Combine ingredients and add to one side of removable divided dish.

Zucchini with tomatoes
¾ lb fresh zucchini, diced
1 can diced tomato (14 ounce)
½ teaspoon salt
½ teaspoon ground black pepper
¼ cup finely diced onion
Combine ingredients and add to one side of removable divided dish.

Cover with glass lid and cook 6-8 hours on low.
