Stuffed Turkey Loaf with Cauliflower and Lima Beans

Stuffed Turkey Loaf
2 lbs ground turkey
½ cup finely diced mushrooms
½ cup finely diced onion
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves
1 teaspoon dry thyme leaves
½ lb sliced ham
½ lb Swiss cheese, sliced
16 ounces prepared alfredo sauce
½ cup water
Combine all ingredients except ham, Swiss cheese and alfredo sauce. Add ½ of turkey mixture to bottom of large removable stoneware. Layer the Swiss cheese and ham to within ½ inch of the edge of the meat mixture. Add the remaining turkey mixture and seal the top and bottom edges together. Combine alfredo sauce and water. Pour over turkey mixture. Cover with divided stoneware dish.

Cauliflower
3 cups cauliflower, fresh or frozen and defrosted
1 Tablespoon fresh ginger, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons ground turmeric
Juice from 1 lemon
1 teaspoon lemon rind
¼ cup olive oil
Combine all ingredients except cauliflower. Stir well. Add cauliflower and toss gently to evenly coat cauliflower. Add to one side of removable divided dish.

Lima Beans
3 cups frozen lima beans, defrosted
2 tablespoons butter, melted
¼ cup onion, finely diced
2 cups chicken broth
Combine lima beans, butter and onion. Add to one side of removable divided dish. Add chicken broth.

Cover with glass lid and cook 6-8 hours on low.
