Vegetarian Bean Medley with Pineapple and Orange Sweet Potatoes and Creamed Spinach

Vegetarian Bean Medley
½ cup onion, finely diced
1 can (16 ounce) garbanzo beans, rinsed and drained
1 can (16 ounce) black eyed peas, rinsed and drained
1 can (16 ounce) black beans, rinsed and drained
1 can (16 ounce) kidney beans, rinsed and drained
1 can (6 ounce) black olives, drained
1 can (15 ounce) tomato sauce
1 can (15 ounce) diced tomatoes
1/3 cup brown sugar, packed
1/3 cup apple cider vinegar
1 clove garlic, finely diced
¼ cup Worcestershire sauce
Combine all ingredients and add to large removable stoneware. Cover with divided removable stoneware.

Pineapple and Orange Sweet Potatoes
¾ lb sweet potatoes, diced
4 tablespoons butter, melted
1 can (8 ounce) pineapple tidbits
3/4 cup orange juice
Combine all ingredients and add to one side of divided stoneware dish.

Creamed Spinach
2 (10 ounces each) frozen spinach, defrosted and drained
1 cup sour cream
½ cup chick broth
Combine all ingredients and add to one side of divided stoneware dish.

Cover with glass lid and cook for 6-8 hours on low.
